If I’ve missed this please let me know. I’ve seen some threads on the forum about updates, but I want to know specific steps to the process.
I’ve downloaded the newest version and then what? How do I make sure this has worked?
AFAIK, it should just be a matter of overwriting the app bundle and then you can update cores from the online updater.
The RetroArch version number should be printed in the lower-left corner of the main menu, so when you update, you should see that version go up.

I checked the system info and it had the build date from the nightly, so I am confident that it worked. I just saw all these YouTube tutorials for the PC that looked much more complicated. It made me think I was doing something wrong.
