Since the Tab S7 is new (August 2020), I am guessing it is still being Evaluated for what Cores it can use. But it is missing the MAME Cores after 2003+.
Most of the MAME snapshots don’t build for 64-bit. There’s just 2003 and the up-to-date MAME core that you have to download from https://github.com/libretro/mame and install through the “install a core” option (this is temporary until we can get it integrated with the online updater)

So grab the ARM64 Builds. Where would I go on the BuildBot? ARM64-v8a or x86_64?
ARM64-v8a. x86_64 is for 64-bit x86.

Unfortunately, I can NOT seem to change the Directory for the Cores, and the Device is NOT Rooted.
EDIT - Nevermind. Forgot that I had to INSTALL the Core. LOL

Only for 32-bit installations. 64-bit is just 2003 and latest, AFAIK.
