Trying to install or live boot, I keep getting this message
Error in mount_flash mount_common: Could not mount

Sounds like the installation media wasn’t prepared properly??
… I usually use Rufus to create bootable media, without any issues. (it can create both legacy/uefi boot instances)
If issue persists, you could also try updating bios to see if that helps.
